Capsaicin is the reason why hot foods are hot, the more capsaicin, the hotter it is. Ever wonder why water makes it worse? It’s because the tiny molecule (capsaicin) is fat-soluble, meaning it mixes well with fatty things, so water isn’t going to help, but milk will (a little bit).

As always, if you can’t take the heat, stay out of the kitchen!
